Well, pretty much everyday is meatless at our house but it's a catchy title. My favorite cookbook of the moment is America's Test Kitchen Vegetarian.
I really needed something with new ideas for supper that I didn't have to think about too much because it can be such a hectic time of day around here.
I like that this cookbook has Alton Brownish explanations for why the recipe works with the particular ingredients recommended.
These eggplant roll-ups were the first recipe I tried and they were delicious!
I've made a few more things from the book and we really liked them all - yay!!
Tonight's supper will be this tomato-potato gratin with an arugula salad on the side.
