Meatless Monday

Potato Cabbage Wonder Pie

OK, this might not be the prettiest thing ever BUT, as a person of Scottish and Irish descent, potatoes and cabbage are pretty much my favorite foods so I'm totally excited about supper tonight !  Yum...

Honestly Linda it was way too much work for what ended up to be mashed potatoes with stuff added. I'm fine, always thinking I'm going to bust out with more blogging, Etsy shop listing, etc. but it doesn't quite happen...Wishing you all the best, as always, my friend, xoxoMary

I make this when I have made too many mashed potatoes. It is a mess to clean up, but extremely yummy. Yours looks wonderful! x

I was just house sitting for my daughter, and there was a big pot of mashed potatoes, and I had some purple cabbage, so sauteed then with onions, and added an egg (either mixed first with the spuds, or scrambled in later) ... mmm

You must check out my friend Ellie Gunn's books, I especially "I promise to go Wandering" which features a young Canadian born Scot, ...
